Jonathan Deutsch, PhD, a professor in culinary arts and food science, was quoted in an April 20 Philadelphia Inquirer article on the environmental problem of food waste and the recent Environmental Protection Agency grant the Food Lab, the culinary innovation lab in the College of Nursing and Health Professions, received to focus on preventing food waste in home kitchens.
