Center for Hospitality and Sport Management Launches Drexel Food Lab

The Drexel University Center for Hospitality and Sport Management has announced the launch of the Drexel Food Lab, an interdisciplinary research group that aims to solve real-world problems through recipe development, product development and product ideation.  

The Drexel Food Lab conducts multifaceted projects for the food industry, government and non-profit partners, as well as its own commercially viable products that provide sustainability for the lab in the form of technology transfer.

The lab uses a Robin Hood-style model where projects for industry and pro bono projects in collaboration with community partners are developed concurrently. Students are actively engaged in all projects, making the lab especially appealing to problems targeting a youth demographic.

Current projects are focused in the areas of sustainability, health promotion, and non-communicable disease prevention to develop affordable, sustainable and healthy food products and recipes. 

The Drexel Food Lab is being led by Jonathan Deutsch, PhD, professor and founding director of the Center for Hospitality and Sport Management.  Start-up funding is being provided through a generous donation by the Octavia Foundation to assist in the lab’s launch.

While the Drexel Food Lab will be fully self-supporting via contracts with industry, collaborative grants stemming from pro bono work and revenue from developed food products, additional funding is needed for equipment and facility improvements, updates and acquisitions.
